Gluten Free Tuna and Polenta Bites (+MeatlessMonday)

Free of gluten, dairy, eggs, soy


I love these little tuna salad and polenta bites for hot summer days, and especially when we're having a dinner party. I've made them a few times lately because it's been too darned hot to spend any time over the stove.

They're fast and easy and you can make them ahead of time, cover them, and pop them in the fridge until you serve them. These tuna and polenta snacks are also great for pot-lucks or as hors d'oeuvres.








Ingredients for Tuna and Polenta Bites (makes about 12-16)



1 package organic gluten free polenta, sliced into rounds about 1/8" thick (I used Anna's organic quinoa polenta, but Food Merchant Ancient Harvest is also good)

1 can tuna, drained (check my post on buying Ocean Friendly fish to choose the most eco-friendly options)
1/8 tsp garlic powder
2 celery stalks, minced
¼ cup fresh chopped parsley
1-2 Tbsp olive oil (more if needed)
Salt and pepper to taste
1 Tbsp capers
1 Tbsp lemon juice


Directions

Mix together tuna, garlic, celery, parsley, olive oil, salt and pepper, capers, and lemon juice. Add more olive oil and lemon juice to taste if tuna is dry. Spread approximately 1 Tablespoon on each polenta round.

Cover and chill until ready to serve.
